change default action on clicking a file

If I open a directory on my SD card using the file:///storage/000-000/Music link I want to have an mp3 file open in a particular app when clicked. At the moment clicking opens it in one app, holding the link for a second or two opens a menu from which I can select "open in an app" which opens it in a different app - how do I customise these actions?
